Meet Peter, an Executive Chef, who has been cooking since he was 8 years old. From hotels and restaurants to music festivals and movie studios, music has taken him all over the world.

Food is more than just an occupation for Peter - it’s a lifestyle. Cooking meals for loved ones brings him a sense of joy and fulfillment. After all, the best part of cooking is eating!

In addition to his deep love for music, Peter’s family shares his passion for music, whether cooking, cleaning, or even hanging out by the pool.

Living in Coachella Valley (yes, THAT COACHELLA), where temperatures can reach 120°F, means Peter’s family spends a LOT of time in the pool. For them, the Klipsch Groove easily integrates into their daily lives. They can simply pick it up and place it poolside or take it on the next big family adventure.

Another favorite past time for the Zimowski household is growing their vinyl record collection. Shortly after getting together, Peter and his wife began collecting vinyl and that has expanded over the years, along with their family. Each of the three children has contributed their personal favorites, while their ever-evolving music tastes have added to the great variety of albums.

Music and cooking are intertwined in both Peter’s personal and professional life. Every kitchen he’s worked in has incorporated music for several reasons: it creates the right mindset during food prep, keeps everything up-tempo during busy dinner service, and cools things down after a long shift.

Likewise, the two are present at the most poignant of moments. Peter explains, “During times of celebration and times of sorrow, food and music bring us together, help tell our story, and connect us with our experiences.”

Crispy Pork Carnitas Sandwich - With cilantro Sriracha slaw and caramelized onion aioli

“I enjoy food from all over the world, but something always brings me back to Latin and Asian flavors. Both these cuisines have common ingredients like cilantro, citrus, and something spicy. This sandwich features carnitas - tender braised pork crisped in its own delicious fat. In addition, the cilantro Sriracha slaw gives it a fresh crunch and the right amount of spice. To round it all out, the caramelized onion aioli gives a little sweet and adds smoothness.” – Peter Z.


Recipe

  • 8 oz carnitas - crisped in a pan over medium heat and finish with the juice of 1 lime
  • (4) buns or bolillos (toasted)


Slaw – combine all

  • 1/2 cabbage, shredded
  • 1 bunch washed cilantro, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • Sriracha to taste – about ½ tablespoon to start
  • Salt & Pepper to Taste

Caramelized Onion Mayo – combine all

  • ½ onion, small dice and caramelized with a little butter or oil over low heat
  • 1 cup mayonnaise
  • The juice from ½ a lime
  • ½ teaspoon ground cumin
  • Salt & Pepper to taste
